The State of the Food Industry

Abstract
 
The food industry has been bombarded by a number of well publicized events over the last fifteen years, from foodborne outbreaks, to bioterrorism. Consumer trends drift from one requirement to the next, complicating food choices in developed countries where the media plays an active role in guiding the public. Trends range from Allergen-Free food, Fair Trade, Organic, Low Carbon Foot print, GMO free, Nutraceuticals, Nutrition labelling and a host of other marketing parameters retailers use to claim a premium price for their offering. How can food producers in small economies enter such an arena and what can they do to survive? Securing a future in food exports could mean adapting products to meet the requirements in the target country and creating a market where none existed before. Food safety and hygiene programs like GAPs in farming, GMPs and HACCP in food processing are now pre-requisites to trading with large supermarkets in North America and Western Europe. New research is needed in extending the shelf life of tropical fruits and vegetables, and creating value added products which would command a higher value. Using traditional Caribbean recipes in new ways to promote good health, and exploring the ready-meal market: chilled and frozen, could open new avenues for food processors in the Caribbean. Overcoming hurdles in storage and distribution of food would be the key to sustainability of new ventures.
